作り方
かぼちゃは皮と種を取り除き、小さめに切ります。玉ねぎは薄切り、生姜は細かく刻みます。
鍋にオリーブオイルまたはギーを入れ、玉ねぎと生姜を弱火で軽く炒めます。
かぼちゃと水を加え、かぼちゃが柔らかくなるまで10〜15分ほど煮ます。
火を止め、ブレンダーやミキサーでなめらかにします。
牛乳または豆乳を加えて弱火で温め、塩で味を整えたら完成です。
お好みでクミンを少量加えると、やさしいスパイスの香りも楽しめます。

Gentle Pumpkin & Ginger Soup
Pumpkin and ginger make a comforting combination for the transition into autumn.
The natural sweetness of pumpkin pairs beautifully with the warmth of ginger, creating a simple and soothing soup that works well for breakfast, a light lunch, or as a side dish with dinner.
Ingredients — Serves 2
200 g pumpkin
1/4 onion
About 1 teaspoon fresh ginger
250–300 ml water
100 ml milk or soy milk
1 teaspoon olive oil or ghee
A pinch of salt
Optional: a small pinch of cumin
Method
Remove the seeds and skin from the pumpkin and cut it into small pieces. Thinly slice the onion and finely chop the ginger.
Heat the olive oil or ghee in a saucepan and gently sauté the onion and ginger over low heat.
Add the pumpkin and water, then simmer for around 10–15 minutes until the pumpkin is soft.
Remove from the heat and blend until smooth.
Add the milk or soy milk and gently reheat over low heat. Season with salt.
If you like, add a small pinch of cumin for an extra layer of gentle spice.
The key is to keep the soup light rather than overly rich. There is no need for a large amount of cream or butter—the natural sweetness and texture of the pumpkin already make it satisfying.
